WHAT’S THE JOB?The Executive Chef supervises and coordinates activities of Chefs and personnel engaged in menu development, production levels, and food preparation across multiple operations (catering, residential dining, retail). They prepare hot and cold items, specialty dishes, and manage/train culinary personnel to meet client expectations. Duties include:
- Menu development and planning (retail, residential, commissary, catering)
- Budget preparation and food cost/record management
- Food preparation, presentation, quality standards
- Food product requisition and purchasing (compliance, quality, safety)
- Local purchase process oversight (KPI compliance)
- Waste management training and compliance
- Fair Trade compliance training
- Team training and development
- Food sampling menu development and participation
- Location sustainability initiatives and reporting
- Food production record completion or delegation
- Menu costing for budget adherence
- Troubleshooting food cost issues (portion control, costs, quality)
- Production schedule planning, equipment maintenance, production line supervision (portion control, employee/equipment utilization)
- Dana Hospitality Seasonal Inspirations compliance and tracking
- Compliance with Dana Hospitality/Dexterra policies and procedures
- Government legislation compliance (Food Safety, Sanitation, Occupational Health, etc.)
- Support and leadership for Sous Chefs, Chef Managers, cooks
- Client communication and meeting attendance
WHO ARE WE LOOKING FOR?
- Minimum 2 years’ experience in a similar role
- Multi-unit management experience preferred
- Bachelor's degree or culinary diploma
- High-end catering knowledge
- Strong Food and Beverage Management experience
- Event planning and organization skills
- Attention to detail
- Microsoft Word and Excel proficiency
- Financial management skills (budgeting, forecasting)
- Assertive, professional, positive leadership
- Strong communication skills
Additional Training: ServeSafe, First Aid, WHMIS, allergen awareness, sustainability certification
Physical Demands: Frequent standing, sitting; lifting (0-25 lbs overhead), pushing, pulling carts, bending, twisting
